Chopped Tomato Basil Sauce

I can’t think of two better companions in the vegetable garden and the kitchen than tomatoes and basil.  They grow so well together, it only makes sense that their flavors complement each other.  Another great characteristic that they have in common is they taste great  fresh-picked from the garden.

Chopped Tomato and Basil Sauce

Ingredients:
4 medium sized, ripe tomatoes (about 1 1/2 pounds)
1/4 cup olive oil
2 medium cloves garlic, minced
1/2 cup chopped fresh basil
1/2 teaspoon salt
1/2 teaspoon hot red pepper flakes or to taste

Instructions:
Remove and discard the cores of the tomatoes and then coarsely chop them and put them in a large bowl.

Add the olive oil, garlic, basil, salt and red pepper flakes to the tomatoes. Stir well.

Cover and set aside a few hours to release the tomato juices and let the flavors combine.

This tomato sauce will keep for one week in the refrigerator.

This recipe is perfect spooned over toasted french bread rounds with mozzerella cheese slices.

We really enjoyed this recipe. It goes well with pinto beans ,mashed potatoes or added to a tossed salad. I used Roma tomatoes. For a little different taste I substituted Vidalia onion for garlic and added some finely chopped burpless cucumber and totally left out red pepper . Served this one over past. Quite tasty too. Next project: Grow Basil !

Try the same with a mild freshly chopped oregano (use less than basil), with or without the garlic, this fresh salsa is a delightful side to almost any summer meal and a wonderful way to incorporate fresh oregano. Grind frsh pepper over to serve and you are done.

Is this to be used like a salad or should it be simmered lightly and used as a sauce over pasta? If its cooked will the skins on the tomatoes come off?

I was told that Genovese Basil was the best for making Pesto. Do you have a good recipe for Pesto? Chopped Tomato & Basil Sauce sounds yummy and 2 plants that I've been very successful with, in spite of my "brown" thumb!

Gee, glad to see this recipe, I grew up on this and look forward to my basil plants every summer to make this. I try to keep a basil plant through the winter but is pretty hard to do. This is so good!
