Herbed Potato Salad

I planted 200 pounds of potatoes at the Garden Home Retreat. Of course I can't eat all of that, I'll have plenty to share with friends and I plan to give some to local chefs. Potatoes are so simple to prepare that they frequently make it onto my dinner table - a little butter and a few fresh herbs are just about all they need.

Herbed Potato Salad Recipe

Ingredients:

  • Pot full of cold, salted water
  • 2 1/2 pounds small, red potatoes
  • 1/4 cup chicken stock
  • 3 tablespoons champagne vinegar
  • 1 teaspoon brown mustard
  • 2 teaspoons sea salt, divided
  • 3/4 teaspoon freshly ground black pepper, divided
  • 1/2 cup olive oil (Don't skimp with this. It should be good quality.)
  • 1 clove garlic, minced
  • 1/4 cup shallots, minced
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon finely chopped fresh parsley
  • 1 teaspoon chopped fresh chives
  • 1/2 teaspoon finely chopped fresh tarragon

Directions:

Place the potatoes into a large pot of cold, salted water. Bring to the water to a boil and cook the potatoes for about 20 minutes.  They should be firm, but cooked through.

Drain the potatoes and set aside to cool just enough that you can handle them.  They should still be a little warm.

Cut the potatoes into bite-sizes pieces.  Place in a bowl and add the chicken broth.  Toss to coat and set aside.  The warm potatoes will soak up the chicken broth, giving them extra flavor.

Whisk together the vinegar, mustard, ½ teaspoon of the salt, and a pinch of the black pepper.

Drizzle the olive oil into the vinegar mix, whisking continuously.

Toss the vinaigrette with the potatoes.

Fold in the garlic, shallots, dill, parsley, chives and tarragon.

Season with the remaining salt and pepper and serve.

I love potatoes. I like them anyway you can make them except scallopped. I would eat them every day with corn bread. I like potatoe salad, too. This recipe sounds great. Debbie Stevens

I was wondering what to make with my last batch of home grown potatoes. This sounds perfect. Think I'll add several more potato mounds in the garden this year.

I guess I was incredibly lucky: Last summer, just as a lark, I popped little red potatoes in the ground - the ones that had spared themselves the mashed potato recipe by rooting in their wooden bowl. It was June at least, but the plants flourished and the hills in the flower garden gave up nice bunches of tiny edibles - they were so perfect that my neighbor came over and ate some right out of the "womb." I try to incorporate vegetables and herbs with the flowers, because that's the only spot in the yard with any sun. People stroll by and love trying to identify what's out there. I get a good back-home-on-the-farm chuckle watching them hold their chins in their hands and speculate - and they obviously enjoy the detective work. Thank you for one of the greatest resources on the Web - or anywhere else. I look forward to every newsletter with relish and always spot something that works in the kitchen or in the garden.

Great recipe

Although, I do not have shallots in my garden all other ingredients will be there. I just know this is a fabulous recipe as I have used fresh tarragon previously in potato salad and it is a grand flavour.( I am assuming my tarragon have survived an extremely bitter winter here. )Thanks
