Freezing basil.

We have good success freezing basil. We simply put in in a plastic bag and pop it in the freezer. No effort and great results. We enjoy basil on bruschetta and frozen basil loses nothing in terms of flavor and aroma.

I have been looking for over 3 years to buy a bay leaf plant on line. I moved and left my old one at the house it was in the ground and was about 4 feet tall. I have one nursery in town and they do not carry them. The large chain garden centers do not carry them. Can you help. Thank you I read you letter every week and watch your tv series.

Can basil be easily grown indoor in the winter? That is one herb I really would like fresh. How difficult would it be to grow it indoors during the winter months?

I already have all my little pots of Sweet Basil all lined up on my western windowsill. They're almost ready to have their precious leaves plucked and frozen in my ice cube trays. I am ready for Mr. Winter to come!!

preserving herbs

I have discovered a wonderful way to preserve herbs for the winter. Living in Myrtle Beach, herbs usually grow outside all winter long, but, when winter sometimes gets frosty, the herbs can die. Cut, wash, pat dry and chop very finely. Place one tsp. of each different herb into a plastic ice tray or place all one kind of herb into the whole tray, fill with water and freeze. I made little name tags on my computer and froze them into the cubes. After freezing, put all of the same cubes into a freezer zip lock bag, mark and keep in the freezer. When a receipe calls for one tsp of an herb, just drop one ice cube into sauce and Voila! This so easy that while I'm fixing dinner, I chop another tray full and freeze. This method preserves the aroma and fresh green taste, the same as it was while growing the garden. Bon appetite!

Growing herbs ~

Just don't plant herbs to close to a gas stove because the slight and unseen fumes can stunt parsley and other herbs or make them grow spindley.
