In the Kitchen: Vidalia Onions

Anyone who has ever tasted a Vidalia onion knows what a great flavor it has. I am always happy when I see them in the produce aisle at the grocery store in spring.

Vidalias come from an area in Georgia where the climate and soil work together to produce this super sweet onion. I love raw Vidalia onions and cucumbers soaked in sugar, vinegar and water. This relish is delicious with fresh sliced tomatoes.

You can find Vidalia onions in your local grocery beginning in April and if you are lucky they will continue to be available through November. Select those with a golden skin and milky white flesh. I like to purchase several to have on hand over the course of the summer. To store any type of onion keep them in a cool, dry location and make sure that they don't touch each other. Some people put them in the legs of panty hose and hang them. To do this simply select a pair of clean, sheer hose, drop in the onions, tying a knot between each onion so that they do not touch.

i have a wonderful easy vadalia onion recipt for a hot dip for crackers. would love to freeze for the winter months. How do I do that? 2 cups Hellmans mayo,2 cups chopped vidalias, 2cups shredded swiss cheese bake till golden brown at 350.serve with crakers

Easier than a knot between each onion is simply a bread twist. All our onions store this easily in the garage.

My step father used to fix the mixture you mention with onion in it and kept it in the refrigerator, I loved it and never knew the quantities he used. He's, of course, gone now and if you have the combination I'm sure a bunch of us would love it.

We love Vidalia Onions. I peel them, put them in a dish with a little butter on top and some season-all, then microwave them for about 5 minutes. Reallygood.

They are great as relish with mango and tomatoes. Dice all three and place in bowl ,add salt to taste. Great with any fried meat like chicken and porkchop.

When I lived in Georgia for a short while, a friend invited me for dinner and make onion soup with Vidalia's. You know how big they are. The soup was so good, the rest of my dinner, steak and all, went home in a doggy bag. The receipe is super simple: Per person 1 vidalia onion 1/4 c water 1 tsp beef bullion 1 Tbsp butter 1 HEAPING Tbsp Cheese Whiz (no substitutes) Peel onion and slice a piece off the bottom so it will sit flat. Set the onion on a large piece of foil, and cut a "crater" out of top, enough room to put in the butter and bullion). Pull the foil up around the onion, pour in the water, and twist the foil closed to hold in the steam when you put it in the oven. Bake about 90 minutes at 350, or until the onion pierces easily with a fork all the way thru. Completely cooking the onion is key. When cooked, untwist the foil, put the cheese whiz on top, close and let sit for about 5 minutes. Serve in the foil. Normally, I would not even try a receipe using Cheese Whiz. Fortunately, I ate it before I found out what the cheese was. Everyone I have ever served this to loves it, and even my non-cooking friends ask for the receipe. I have tried "good" cheeses, but nothing else works. Try it, you'll LOVE it.
