		<description>Your advice about fermenting pickles is just plain wrong (sorry).  Fermenting pickles is not pickling--they are two different processes and result in two different products.  Fermenting cucumbers is an easy reliable way to preserve them.  It is also more nutritious than pickling.  No sugar is required, and no cooking which kills nutrients and enzymes contained in fermented foods.  I do agree that pickling is a good place to start, but please don&#039;t scare people into thinking that they can&#039;t ferment garden produce safely.  A good book to get an understanding and recipes is Wild Fermentation by Sandor Ellix Katz.  We have had huge success in fermenting and I&#039;m a bit of a zealot about it--thanks for letting me post.</description>
