Broiled Pork Chops With Cherry Sauce

Ingredients
- 2 boneless pork chops, 1 inch thick
- 1 cup chicken stock
- 1 clove garlic
- 1 sprig thyme
- 1/3 cup dried sweet cherries
- salt and pepper
- 2 teaspoons olive oil
- 1/3 cup balsamic vinegar
Instructions
Combine vinegar, chicken broth, thyme and garlic in a saucepan. Bring to a boil; reduce heat and simmer until reduced to about 2/3 of a cup. Remove the garlic and thyme sprig and add the dried cherries. Heat through and season with salt and pepper to taste. Set aside.
Brush the pork chops with olive oil. Generously season with salt and pepper.
Preheat the broiler to high. Place pork chops on a broiler pan and position 6 inches below the broiler. Broil until browned, about 8 to 10 minutes. Turn the chops and broil another 8 to 10 minutes.
Remove the pork chops from the oven and let rest for 5 minutes.
Top with the sweet cherry sauce and serve.
