Cool Cucumber Soup
When warm temperatures begin to roll in, I find myself looking for the shade and cool, refreshing things to eat. This time of year cucumbers are fresh and plentiful and I really like their flavor, so any recipe that uses them almost always catches my attention.

One of my favorites is this cold cucumber soup. It's delicious for an early evening meal after a long day in working in the garden. Plus it is extremely easy to make - another benefit when you are worn out from weeding and watering.

This recipe will make enough for two people, but it is easy to increase the amount by doubling the ingredients.



Start by peeling the cucumber. Then quarter it long ways into 4 pieces and remove the seeds. Sprinkle a little salt over the slices and let them sit for about an hour.

After an hour has passed, rinse the salt from the cucumber slices and put them in a blender and puree.

Once the cucumber is nice and smooth add the yogurt, lemon juice, honey, mint, salt and pepper and blend. Then just pop it in to the refrigerator until you are ready to serve!


Time to prepare: 1 hour, 15 minutes.

Serves 2.
