Corn Meal Waffles With Pear Maple Syrup
The espaliered pear trees in the garden are producing beautiful pears this year. When I can get to them before the raccoons I like to make waffles with pear maple syrup. This is a delicious breakfast on a frosty Sunday morning.
To make the pear syrup combine all the ingredients in a small sauce pan. Bring to a boil and then reduce the heat. Cover and simmer until the fruit is soft, about 10 minutes. Break up the pears with a fork and pour the syrup into a small bowl for serving. Stir in pecan pieces, if using.
To make the waffles place all the ingredients in a large mixing bowl and combine until well blended and smooth. Let batter sit 5 minutes before using.
Heat the waffle iron.
Pour some batter onto the center of the lower waffle grid. My waffle iron uses about 3/4 cup of batter. Depending on the size of your waffle iron you may need more or less. Close cover until done. Most electric waffle irons have a light or some other indication of doneness. If your does not check the manufacturer's instructions. Steam also decreases as waffles become done.
Open and remove waffle. For best results, serve immediately. However you may keep waffles warm in a 200 F oven until ready to serve. Place them in a single layer directly on the oven rack to prevent them from getting soggy.
