Creamy Potato Salad

Cream cheese, sour cream and mayonnaise combine to make this potato salad extra creamy and super delicious!

The potato is one of those common everyday things we take for granted. Without them in our daily diets they would certainly be missed, but to look at them they don't appear very exciting. So it's curious how they have become so popular. For me, these are the principal ingredients for many of my favorite dishes.

Take that all time summer favorite, potato salad, for instance. Now I know there are as many old fashioned recipes for potato salad as there are families that enjoy this classic dish. But I have one you will want to try because it is simple to make and very tasty.



Start with about 3 pounds or 25 small to medium potatoes. I like using red ones because they hold their moisture well, they don't fall apart after cooking and when quartered they are the perfect size for the salad.

After washing and slicing the potatoes boil them with their jackets on for about 20 minutes until they are soft. Then rinse them with cold water and set aside.

In a large bowl mix 1 cup of chopped Vidalia onion with 1 cup of mayonnaise, 1 cup of sour cream and an 8 ounce package of cream cheese. To this add 1 1/2 tablespoons of dill, 1 teaspoon of Beau Monde seasoning and 1 tablespoon of chopped fresh parsley.

Fold all of the ingredients together and add the cooked potatoes. Chill the salad for at least a few hours before serving.

Now this is a creamy potato salad that is easy to make and it is the perfect compliment to many of our favorite summer dishes.
