Creme Fraiche And Berries In Chocolate Baskets

One philosophy that I really think we all can apply to our lives is moderation -- eating good foods, but in small amounts. When I visited Turtle Cove Spa in Mountain Harbor, Arkansas I discovered a dessert that is just the right amount of decadent chocolate combined with fresh summer berries. What I like about this dessert is it looks very complicated, but in reality, it's a very simple dish to make.
Ingredients
- 1 cup chocolate chips
- 1 tbsp. vegetable shortening
- 1 1/2 cup black berries
- juice of 1 lemons
- 1/4 cup sugar
- 1 qt. blackberries
- 1 pt. raspberries
- creme fraiche
Instructions
Combine 1 cup of chocolate chips and 1 tablespoon of shortening in a medium sized microwave safe bowl. Microwave on high for about 1 1/2 minutes. Remove the chocolate from the microwave. The chips may hold their form, but the will be soft. Stir well.Spoon circles of chocolate onto a piece of wax paper. Make the circles 4 to 5 inches across. These will be the bottoms of your basket.
Using a parchment cone (a paper pastry bag) or an airtight plastic bag with the corner snipped off, drizzle lattice-like designs on the wax paper. It doesn't matter how exact it is -- just whatever you like.
Put the chocolate into the refrigerator to cool. This will take 30 minutes to an hour.
While the chocolate is cooling make the blackberry coulis.
Place 1 1/2 cup blackberries, juice of 1 lemon, 1/4 cup sugar in a food processor and blend until smooth. Strain to remove the blackberry seeds. Set this aside.
Now you are ready to assemble the baskets. Place the chocolate disk on a plate. Top it with blackberries, raspberries and creme fraiche. Lean a few of the chocolate lattice piece on the berries. Garnish with a dollop of blackberry coulis.
