Cumin-Crusted Grilled Tri-Tip
As the charcutiere and owner of Hillcrest Artesian Meats Brandon Brown knows a thing or two about meat. He shared this recipe for a cumin dry rubbed tri-tip that is out of this world. The tri-tip is a muscle meat that is ideal for grilling, marinades and dry rubs like this one. It's a great rub for any type of beef.
Generously rub the tri-tip with dry rub 20 minutes prior to cooking. Rub the seasoning on all sides and press into the meat. Set aside unrefrigerated. Cold meat will not cook evenly.
Once the grill is ready place the prepared tri-tip on the direct heat and cook on each side for 5 to 10 minutes or until it is nicely charred.
If you are using a gas grill turn the heat to low or move the meat to the coolest part of a charcoal grill. Cook for 15 to 20 minutes on each side. Don't flip it back and forth. Let it sit for the full time on each side. It will be 130 degrees F when it's done.
Remove the steak from the grill and allow to stand for 10 minutes. Cut it across the grain to serve.
