Fresh Melon With Citrus Ginger Honey
Melons are great paired with tangy cheeses such as havarti, gorgonzola or chevre or served as a refreshing dessert with an after dinner wine. This recipe can be used either way.
Combine the water, lemon juice, ginger, brown sugar and honey in a small saucepan. Bring to a boil, then reduce the heat. Simmer the syrup for about 10 minutes, stirring constantly.
Remove the saucepan from the stove top and stir in the lemon zest. Allow the syrup to cool and then strain to remove the ginger and lemon zest.
Slice the melons in half, remove the seeds and using a melon baller tool scoop out 4 cups of melon balls. When I made this I actually ended up with enough syrup for more than 4 cups of melon balls, so scoop out as many balls as you can from 2 large melons.
Place the melon balls in a bowl and add the syrup. Stir to coat and refrigerate for a few hours.
Serve cold as a refreshing dessert or with cheeses, meats and bread as an aperitif.
