Garlic Pasta

In this day of fusion cooking and fancy presentations sometimes it is nice to sit down to a meal that is simple, such as this classic Italian pasta dish. Made with just a few ingredients it can be prepared with items that you probably already have in your kitchen - olive oil, garlic, red pepper flakes, a little salt, Parmesan cheese and pasta. If I'm feeling fancy I top each serving with a spoonful of pesto.

In a large skillet heat olive oil, 1 tablespoon of water and garlic over a medium flame. Add pepper flakes and salt. Reduce heat and sauté until garlic is fragrant, about 2 to 3 minutes. The garlic should be golden, not burned.

Remove the garlic sauce from the stovetop and set aside to steep while you cook the pasta.

Toss the sauce with the cooked pasta until well coated. To prevent it from clumping allow the pasta to cool just a tad before adding the cheese. Toss again until the cheese is well distributed.

If you have pesto on hand spoon a bit over each individual serving.

Served hot with a fresh salad, this pasta makes a delicious yet simple meal.
