Herbed Quinoa

Have you ever heard of Quinoa? It's often mistakenly called a grain but, it's really a seed that you can prepare just like a grain such has rice or barley.

Quinoa is a complete protein, which means it contains all eight essential amino acids. It's gluten-free, low carb, and a great source of iron, calcium and B vitamins.

Instructions

Melt 1 tablespoon of butter in a saucepan over medium heat. Add 1 cup of uncooked quinoa and toast it until it's lightly browned. Stir in 2 cups of vegetable broth and bring to a boil.

Reduce the heat to simmer, cover and cook the quinoa for 15 minutes or until it's tender.

When the quinoa is ready turn off the heat and add the minced garlic and the sautéed onion. Give it a good stir and add the Italian parsley and thyme leaves. Season with salt and a dash of lemon juice.

Just mix that up really well and it's ready to serve!
