Herbed Shrimp In The Shells
This is a great recipe to make for dinner parties, because it's tasty and fun to eat. There is something about sitting down with a group of friends and diving into a "hands on" meal. Getting a little messy just adds to the festivities.
Fresh French bread, a loose leaf salad and a cold beer make this dinner complete. And don't forget plenty of paper towels!
Ingredients
- 6 to 8 large cloves garlic, minced
- 2 tsp. oregano
- 2 tbsp. rosemary
- 3 bay leaves
- 1 cup butter
- 3 lb. shrimp, with shell
- 6 scallions
- 1/2 cup green pepper, sliced
- 1/2 cup white wine

Instructions
Saute the garlic, oregano, rosemary and bay leaves in the butter in a large pan. Add the shrimp and saute them until they turn pink.
Remove the shrimp from the pan. Thinly slice both the green and white parts of the scallions. Add the sliced scallions and green peppers to the pan. Saute them until they are tender, but still crisp.
Remove the vegetables and stir in the wine. Reduce the sauce. Pour it over the shrimp and vegetables. Garnish with lemon wedges.
