Homemade Tomato Sauce
Try this recipe for fresh tomato sauce. It is a snap to prepare, which means less time spent in the hot kitchen and more time enjoying the garden!
In the summer I don't want to be anywhere near a hot stove and luckily, with all the fresh fruits and vegetables available, I can prepare wonderful meals with a minimal amount of time spent in the kitchen.
Here is a recipe for fresh tomato sauce that is ideal for hot summer weather when the last place you want to be is in the kitchen.
In a cold skillet combine olive oil, garlic and water. Heat until you can smell the garlic.
Add chopped tomatoes, salt and pepper and cook until tomatoes are broken up but still firm.
Turn off heat and stir in chopped, fresh basil leaves. The quantity of basil that you add depends on your tastes. I usually add a small handful. Cover the skillet with a lid and allow to stand for 10 minutes.
Serve hot over pasta with a generous topping of freshly grated Parmesan cheese.
The great thing about this sauce is that you can easily modify with other herbs, mushrooms, green peppers or whatever you have on hand.
Time to prepare: 25 minutes.
