Lemon Chess Pie

Treat yourself to the taste of summer with this easy to prepare lemon chess pie.
With cold weather on its way, I am sure that I will be spending more time in the kitchen. This lemon chess pie is a perfect way to brighten a cold, winter day.
Ingredients
- 1 tbsp. lemon zest
- 1 cup buttermilk
- 1/2 stick butter
- 1 large eggs
- 1/2 tsp. salt
- 2 tbsp. lemon juice
- 2/3 cup sugar
- 5 large egg yolks
- 2/3 cup light brown sugar
Instructions
Put crust into 9" pie pan. Mix together egg yolks, egg, buttermilk, white and brown sugar, salt, lemon zest and lemon juice in a mixing bowl. Cut the butter into the mixture and melt it by setting the bowl in a container of boiling water. Stir until butter has melted completely.
Next pour the mixture into the crust and bake in a 350 degree F preheated oven for an hour and ten minutes until all but the center is firm. Don't panic if the center of the pie remains a little undone. It will firm up once the pie cools.
Serve with whip cream and lemon rind garnish.

Time to prepare: 1 hour, 30 minutes.
