Treat yourself to the taste of summer with this easy to prepare lemon chess pie.

With cold weather on its way, I am sure that I will be spending more time in the kitchen. This lemon chess pie is a perfect way to brighten a cold, winter day.

Ingredients

  • 9-inch pie crust
  • 5 large egg yolks
  • 1 large egg
  • 1 cup buttermilk
  • 2/3 cup sugar
  • 2/3 cup light brown sugar
  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1/2 stick of butter

Instructions

  1. Put crust into 9" pie pan. Mix together egg yolks, egg, buttermilk, white and brown sugar, salt, lemon zest and lemon juice in a mixing bowl. Cut the butter into the mixture and melt it by setting the bowl in a container of boiling water. Stir until butter has melted completely.
  2. Next pour the mixture into the crust and bake in a 350 degree F preheated oven for an hour and ten minutes until all but the center is firm. Don't panic if the center of the pie remains a little undone. It will firm up once the pie cools.
  3. Serve with whip cream and lemon rind garnish.
