No Bake Cheesecake With Thin Mint Crust

Ingredients
- 6 tablesoons butter, melted (for crust)
- 2 sleeves girl scout thin mint cookies
- 4 ounces soy milk
- 1 package jell-o no-bake cheesecake pudding mix
- 1 tube green food coloring gel
Instructions
Crumble up the thin mint cookies and mix with melted butter. Press the mixture into a 9-inch pie pan. Set aside 1/4 cup of the cookie crumbs for later.
Mix in pudding mix with the milk with a mixer. Mix until smooth. Tint with food dye to get a grass green color, measure according to directions. Pour mixture into the pie dish and top with remaining Thin Mint cookie crumbs. Chill until ready to eat.
