Peach Mint Wine Cooler

June is peach season in Arkansas, which means I can indulge in one of my favorite seasonal treats – a homemade peach wine cooler.
Ingredients
- 2 bottles riesling, or other sweet wine
- 1/4 cup peach brandy
- 4 peaches, peeled, pitted
- 2 tbsp. mint, chopped
- splash sparkling water
- 1/2 cup sugar
Instructions
Put the prepared peaches, mint, ½ cup sugar and brandy in a food processor. Blend for about two minutes.
Place in the refrigerator to chill.
Just before serving add two chilled bottles of a sweet German wine like Riesling and sparkling water to taste.
Serve over ice with a sprig of mint.

Time to prepare: 10 minutes.
