Peter Hoffman's Herb Salsa
When Chef Peter Hoffman prepared the meal at the October 2011 Tale of Two Farms, he focused on in season ingredients. Towards the end of October there are still plenty of herbs growing at the farm; perfect for this herb salsa he paired with red beans.
Ingredients
- 1 anchovy, soaked for 30 minutes, spine removed, mashed
- 1 sprig oregano, minced
- 1 tbsp. garlic chives, minced
- 2 tbsp. mint, minced
- 1 sprig thyme, minced
- 2 tbsp. basil, minced
- 2 tbsp. parsley, minced
- 1 clove garlic, minced
- olive oil
- lemon juice
Instructions
Make a paste of the garlic and anchovy. Combine herbs & anchovy/garlic paste; blend in olive oil until saucy. Squeeze in lemon juice to taste. Add salt to taste.
