The earthy heat of the radish is often used to spice up salads, but in my family the preferred way to eat them is thinly sliced on buttered bread. Quite unknown to us the French have been serving radish sandwiches for years. Who knew the Smiths were so chic? This recipe sticks to the basics – radishes, bread, sweet butter and sea salt – but you can add just about anything you have on hand.
Clean the radishes and remove the greens. Set the greens aside.
To crisp them up, place the whole radishes in a bowl of ice water and chill in the refrigerator for about an hour.
Slice the radishes paper-thin.
Rough chop the radish greens.
Spread the butter on one side of the bread.
Top with sliced radishes, chopped radish leaves and sprinkle with salt. Enjoy!
