Roasted Sweet Potatoes

The sweet potato is a vegetable that has unfortunately been relegated to seasonal appearances on the holiday table. I love sweet potatoes but rarely see them prepared any other way than candied or as a pie. I realized that if I was going to enjoy them on a regular basis I would have to come up with a fresh way to prepare them. This recipe is so simple I can eat sweet potatoes to my heart's content any time of the year.



Cut the sweet potatoes into chunks

Preheat your oven to 425 degrees F. Spread the sweet potato chunks in the bottom of a roasting pan. Drizzle them with olive oil and sprinkle with salt. Roast the potatoes for about 25 minutes, stirring them occasionally to brown all sides. They will be fork tender and golden brown when done.


Time to prepare: 30 minutes.

This recipe is vegetarian.

Serves 6.
