Lemon balm, a member of the mint family, is a lovely mild herb that has the scent of lemon with a hint of mint. In fact, the foliage of lemon balm looks like over-sized mint leaves.

Lemon balm grows 20 to 24 inches tall and is beautiful among the other herbs and flowers in your garden. The plant looks best when it is cut back periodically, which is great because that's just more for you to enjoy in the kitchen. As a matter of fact, I have a fabulous Sunshine Lemon Herb Punch recipe that I want to share with you.

Instructions

Peel and core half of a large pineapple, and cut into 1" chunks. Place them in a glass pitcher and, add 46 ounces of pineapple juice, 1/3 cup of freshly squeezed lemon juice, 9 Lemon Balm leaves and 3 stalks of Lemon Verbena.

Chill this mixture overnight. Then remove the whole herbs, and add 4 ounces of ginger ale, 1/8 cup of sweetened lime juice and 3 lemons thinly sliced into rounds. Pour into glasses, garnish with a lemon slice, and enjoy!
