Super Soy Cookies
If you have anybody in the family with a nut allergy, these are a great dessert option. These Super Soy Cookies taste a lot like a peanut butter cookie and are packed with soy power – soy nut butter, soy milk, soy flour and roasted soy nuts!
Begin by combining 1 1/4 cups firmly packed light brown sugar, 3/4 cup soy nut butter, 1/2 cup vegetable shortening, 3 tablespoons soy milk, and 1 tablespoon vanilla extract in a large bowl. Mix well to incorporate.
Beat in 1 egg.
In a separate bowl whisk together 1 1/2 cups all-purpose flour, 1/4 cup soy flour, 3/4 teaspoon baking soda, and 3/4 teaspoon salt. Slowly add this to the batter, beating as you go.
Drop teaspoon-sized spoonfuls of the dough onto an ungreased baking sheet. Space them about 2 inches apart.
Press a few roasted soy nuts down into each cookie.
Bake the cookies in a pre-heated 375 degree F oven for 8 to 10 minutes.
When they’re a nice golden brown color, remove them from the oven and place on a wire rack to cool.
This recipe will make about 2 dozen cookies.
