Thyme And Potatoes

Learning to cook with herbs is an aspect of gardening I've really come to enjoy over the years. You know, once you get into this herb thing it's amazing the different combinations of flavors you can come up with like carrots and dill and rosemary and grilled chicken.

Another combination I like is thyme — whether it's fresh or dried — with fresh vegetables. It's an easy way to season many of my favorites, like potatoes.



Wash the potatoes and cut them into thick slices. Boil the potatoes until they're tender. Once they are done drain the potatoes and rinse.

Heat the olive oil in a large sauté pan or skillet. Add the potatoes, salt and pepper.

Brown the potatoes on each side and add the thyme. Cook for another 2 or 3 minutes.

Serve hot.


Waxy potatoes, or boiling potatoes: Yellow Fin, new potatoes, any type that will hold its shape.

Time to prepare: 20 minutes.
