Tomato And Avocado Salsa

For me, the best foods are those that I can pick right out of my garden. The next best thing is buying fresh food in season. So, late season tomatoes are a natural for using with avocados.
Since most of us are not fortunate enough to have an avocado tree in the garden, we can find plenty in the grocery because many growers are well into the harvest by the end of summer.
I'm preparing a great tasting salsa. It's simple to make and it's delicious with grilled fish or poultry.
Ingredients
- 4 large tomato
- 1/4 cup onion, finely minced
- 2 crushed cloves garlic
- 2 tsp. jalapeno peppers, chopped
- 3 tbsp. cilantro leaves, chopped
- Juice of 1 lime
- 2 avacados, pitted, diced
- 1/4 cup olive oil
- salt and pepper to taste
Instructions
Seed and dice the tomatoes. There's no need to peel them. Combine these with the finely minced onion and crushed cloves of garlic. Now to bring this to life, add the chopped jalapeno peppers, fresh cilantro leaves and lime juice.
Pit and dice the avocados. Then add the olive oil. Gently toss all of this together and add salt and pepper to taste.
Now you will want to prepare this close to the time you'll serve it. You see if you make it too far in advance the avocados can discolor just a bit but it won't affect the flavor.
This is a great end of the summer recipe that can be just the right touch to a picnic.
