Tomato And Basil Pasta
I never thought I'd say this but I have too many tomatoes! It's been an exceptional season and now I have tomatoes coming out of my ears. Fortunately, I love them and have a plethora of tasty recipes that call for fresh tomatoes.
Here's a recipe that is a snap to make and is so delicious I crave it in the middle of winter when there is not a good tomato to be found for miles.
Ingredients
- 8 oz. bow tie pasta
- 3 cups roma tomatoes, chopped
- 1 tsp. thyme, chopped
- 1/2 cup basil, chopped
- 2 tbsp. shallots, minced
- 1 tsp. garlic, crushed
- 1 cup mozzarella, cubed
- 1/2 cup brie, rind removed
- 1/4 cup extra virgin olive oil
- salt and pepper to taste
Instructions
In a large bowl combine tomatoes, basil, thyme, shallots, garlic, olive oil, cheese and salt and pepper to taste. Allow this mixture to sit for about one hour. Prepare pasta according to directions on package. Mix together hot pasta and sauce. Serve immediately.
Notes
This recipe also works well with 1/2 Cup Brie, rind removed, in place of the mozzarella, if you prefer.
Time to prepare: 30 minutes.
