Ingredients

  • 1 pound fresh snow peas, strings removed
  • 2 tablespoons minced shallots
  • 1/4 cup butter
  • 1/4 cup chicken bouillon
  • Salt and freshly ground pepper to taste
  • 2 tablespoons chopped fresh mint

Instructions

  1. Steam snow peas 2-3 minutes or until tender-crisp.
  2. Saute shallots in butter.
  3. Add bouillon and cook until soft.
  4. Add snow peas and heat through over medium-high heat for about 1 minute, tossing well.
  5. Season with salt and pepper.
  6. Sprinkle with mint and serve.
