Mashed English Peas


2 cups shelled English peas (frozen will work as well)
1/2 teaspoon salt
2 tablespoons butter, softened
2 tablespoons Half & Half
black pepper to taste


In a medium sized saucepan add enough water to cover the bottom of the pan about 1/4 inch deep. Add the salt and bring to a boil.

Add the peas and reduce the heat to a simmer.

Cover and cook for about 5 minutes or until peas are crisp tender.

Drain the peas.

Put half of the peas into a food processor and return the other half to the saucepan.

Add the butter and the half and half to the food processor.

Puree until smooth.

Fold the pea puree in with the whole peas and season with salt and black pepper.

Serves 3 to 4.
