Grilled Mushrooms with Artichoke Hearts
Hearty mushrooms caps are stuffed with marinated artichoke hearts and grilled until tender and juicy. An assortment of grilled appetizers starts your celebration with a tasty bang.
Grilled Mushrooms with Artichoke Hearts
Serves 8
Ingredients
1 (14-ounce) can artichoke hearts, drained and halved
1/2 bunch green onions
1/2 tsp of fresh thyme
1/4 cup extra virgin olive oil
1/4 cup rice vinegar
Salt and pepper to taste
18 large mushrooms, stems removed
Marinate artichoke hearts in oil, vinegar, salt and pepper for 30 minutes, or overnight.
Preheat grill to medium. Stuff each mushroom cap with artichoke hearts; reserve remaining marinade. Brush mushrooms with some of the marinade and arrange on the grill, stuffed side up. Grill, basting with more marinade from time to time, until tender and hot throughout, 8 to 10 minutes. Transfer to a platter and serve.
