Ginger Honey Carrots

If you are harvesting carrots from your garden, here's a great recipe using ginger, honey and toasted cumin seeds to accentuate their sweet flavor.

If you are looking for good value among fresh produce, pound for pound it is hard to beat carrots. They are a root crop that, if kept in the crisper of your refrigerator, can last for months. Here is an easy recipe that can really enhance the flavor of fresh carrots.

1 pound or 8 medium sized carrots
1/2 stick of butter
1/2 teaspoon cumin seed
2 tablespoons honey
1 fresh ginger root

Begin by cutting the carrots into 3 inch pieces that are about 1/2 inch wide. Then take the fresh ginger root and cut off a 2 inch piece, peel and thinly slice this piece. Next toast 1/2 teaspoon of cumin seed by stirring them around in a hot skillet for about 1 minute then remove them from the skillet and set aside.

Over medium heat melt 1/2 a stick of butter or a substitute and add the carrots and ginger to saute for 3 to 4 minutes. Once this is done add the 2 tablespoons of honey and continue to saut�© for another 4 minutes until the carrots are tender but firm.

Now all that is left to finish this dish is to sprinkle the toasted cumin seed over the top. Serve warm.
